Mmm, now let me tell you about this deliciousness: peanut buttery, crunchy, chewy bars of goodness. Seriously GOODNESS. It’s like biting into a butterfinger, a rice krispie, and peanut butter ice cream all in one bar. How is that even possible? I really don’t know. Buuuut, here’s the recipe (slightly adapted from Chocolate Covered Katie) for it. It’s so very easy, I promise you’ll love it!
1 cup crushed cheerios (I used these new peanut variety)
1/2 cup oat flour
1/4 tsp salt
1 tsp vanilla
4 tbsp agave
4 tbsp peanut butter
1 tbsp coconut oil (melted)
3 tbsp peanut butter
1 tsp agave
If you don’t have oat flour, process rolled oats in your food processor to yield 1/2 cup.
Process cheerios to yield 1 cup (you don’t want the cheerios crushed too much, only about the size of a rice krispie)
Add crushed cheerios, oat flour, salt together
Add vanilla, agave, and peanut butter in a separate bowl
Add wet ingredients to the dry
Mix well (AGAIN)
Put mixture in a container lined with parchment paper
(I used 6 x 4)
Press down on the mixture firmly
In the meantimewhilefunstuff, make your topping.
Melt 1 tbsp of coconut oil
Add agave and peanut butter
Top on the mixture
Freeze well for about 3 hours
Cut and eat and enjoy and make more and eat more yay!
