Caramelized Onion and Mushroom Creamy Scrambled Eggs

Has anyone seen that Gordon Ramsay video on how to cook perfect scrambled eggs? http://www.youtube.com/watch?v=yv64abAJvEA&feature=plcp. The eggs look so silky, creamy, and buttery and that’s because, well, there’s a buttload of cream and butter in it! I tried to remake these eggs in a healthier way using healthy fats! Also, after stalking other Gordon Ramsay videos on Youtube I saw that he likes his eggs with caramelized shallots and wild mushrooms. So, in homage to Chef Ramsay here are some mushroom-y, creamy eggs!

Recipe (2 servings)
4 eggs
1 tbsp olive oil
10 mushrooms
1 large onion
Salt
Pepper

In a skillet, heat oil
Add onions
Caramelize for 5 minutes on low heat
Add sliced mushrooms
Salt and cook until brown, caramelized, and sweet!

Crack four eggs into small sauce pan
Put the pan over medium-low heat
Add 1 tbsp olive oil
Stir, stir, stir, stir, (did I say it enough times, no?) STIR the eggs for 10 seconds on the heat
Take pan off the heat for 10 seconds while stir, stir, stirring
Put pan back on the heat for 10 seconds keep stirring
Take pan off the heat for another 10 seconds keep stirring
Put pan back on the heat for 5 seconds keep stirring
Take pan off the heat and add salt, pepper, onions, and mushrooms

TIP: Stick the sauce pan once you take out your meal under running hot water in the sink because trust me, the eggs will STICK to the pan. The bottom of it, the side of it, everywhere. Save yourself the pain :,(
