Is it sad that the only time I have to write posts is during Thanksgiving? Yes… But don’t worry, everyone is dead asleep, stomachs filled with turkey. So, it’s kinda the perfect time to post a recipe! This is a breakfast recipe, but so sweetly delicious. (I’m having trouble deciding whether to stick this on my “Dessert” or “Food” Pinterest Board…hmm) Anyways, last Friday, my bestie and I, made breakfast. Yep, she came over at 9:30 on an inservice day, we’re cool, and we made pancakes! We wanted to make interesting, different pancakes with this awesome Trader Joe’s Multigrain Baking Max and cinnamon roll pancakes caught our eye. Well, except the “swirl” part had half a stick of butter in it…what… Sooo, of course, we decided to “lighten” it up. Check it out!
Recipe: (Makes about 10 pancakes)
2 cups Trader Joe’s Multigrain Baking Mix
1 cup milk
2 tablespoons vegetable oil
2 tsp cinnamon
3 tablespoons maple syrup
2 tablespoons powdered sugar
1/2 teaspoon cinnamon
Mix together the pancakes by combining the mix, milk, eggs, oil, and cinnamon. Pancake mix done, woo!
Now, mix together the “swirl” part by mixing the syrup, sugar, and cinnamon
To make the pancakes, scoop about 1/4-1/3 cup of batter on a medium-high pan
Immediately, swirl the cinnamon mixture in a spiral pattern on the pancake. Make sure not to get too close to the edges
Cook about three minutes on each side
Serve with warm maple syrup or a smidgen of cinnamon butter and really ENJOY!
