Fresh Tomato Meat Sauce


What’s gross is bad meat sauce. Thick, gloppy, one-note tomato sauce packed thick with bland, unseasoned meaty ground who-knows-what. But what’s awesome is good meat sauce. We still had some random breast meat from Thanksgiving turkey in the back of the fridge (don’t hate). So, what better to put it in than a steaming dish of fresh tomato sauce. Try it out with any type of white meat, you know, salmon or a meaty steaky fish would work too!

Two cans of whole plum tomatoes (20 plum tomatoes total)
2 cups cubed cooked white meat
2 stalks of celery
1 carrot
2 whole shallot bulbs
1 whole clove of garlic (the whole stinking big thing!)
1/4 + 2 tbsp white sugar
1 tsp garlic powder
1 tsp italian seasoning
Kosher salt
Crushed red pepper
Olive oil

In a food processor, grind the celery, carrots, shallots, and garlic into a paste-like mixture
Add this to olive oil heated in a large, large pot
Sautee on medium for 5 minutes
Turn to high for next 3 minutes
While vegetables are sauteeing, put the meat into a bowl, add in 1 teaspoon of garlic seasoning, 1 teaspoon italian seasoning, 1/2 teaspoon salt and 1/3 cup of the tomato juice from the can
Add tomatoes in, reserving the juice
Mash tomatoes with a potato masher
Bring to a boil, then reduce to a simmer
Taste and add seasonings: salt, crushed red pepper, sugar
Let simmer for 30 minutes
Add half of the reserved juice
Let simmer for another 30 minutes
Add rest of reserved juice
Test seasonings one more time
Add cooked pasta to the pot
Turn heat to low and let the flavors meld in the pasta for about 5-10 minutes
Stir in chopped basil

Tada! A beautiful meat sauce! Enjoy 🙂
