Apple Pie Bread Pudding


Ever crave the flavors of apple pie, but…not in apple pie form? Well, this recipe is absolutely for you!. I LOVE bread pudding. I’d just like to shamefully say that the first time I had bread pudding was a few years back peach bread pudding at a large homestyle buffet. Sounds sketchy, but it was SO good. The bread melted like warm creamy dough against the cooked peaches. Yeah, it was good. So, anyways after looking what’s in traditional bread pudding, I am a little worried. Butter, heavy cream, exorbitant amounts of egg yolks?! Never fear, here is a low-fat version that you can enjoy, guilt-free, and happily!

Apple Pie Bread Pudding
7 cups of cubed heavy one-day-old bread (I used an italian loaf)
1 large apple, cut into small chunks
1 can fat-free evaporated milk
1 .5 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1 cup unsweetened applesauce
1/2 cup super packed brown sugar
2 eggs

Preheat oven to 350 degrees
Whisk together evaporated milk. spices, applesauce, brown sugar, and eggs
Add apple chunks into this mixture
Place cubed bread in a greased 9×13 baking dish
Pour milk mixture over cubed bread, coating the whole thing
Bake in oven for 1 hour or until browned
At the last 5 minutes, you can turn on the broiler to crisp the top
Serve WARM with greek yogurt or vanilla ice cream and be transported to awesome apple pie bliss!
