Pink Jicama Salad


Warm masala chai tea, Criminal Minds, and a fuzzy snuggie: the perfect ending to the dreaded midterm week! I haven’t been able to post a recipe for quite a while now because my computer time has been occupied by…studying. But now I’m freeeeee to post a recipe and this is the perfect recipe to brighten spirits. Literally. Like look at the colors. Bright pinks, luminescent whites, it’s so pretty. If you’re looking for the perfect accompaniment to a herbed chicken breast, poached white fish filet, or just by itself!

1 jicama,
1 beet
1 crisp granny smith apple, peeled
1/2 cup dried cranberries
1 tbsp fresh squeezed lime juice

Julienne the jicama, beet, and apple
Mix together in a large bowl
Don’t worry if the beet stains the apple and jicama! It’s supposed to. It makes everything a bright pink!
Add in the cranberries and lime juice right before eating
