150 Calorie Double Chocolate Chunk Muffin


Okay, if anyone of you have seen my 100 Calorie Apple Cinnamon Muffin post you’ve seen the dreaded Au Bon Pain Chocolate Chunk Muffin with a whopping 620 calories. I don’t even want to go into details about the fat content…I’ve tried so so so many times to make a low calorie chocolate chunk muffin reminiscent of those big Costco muffins (which are basically like dessert. Come on, have you seen those things?!) Anyways, yeah, I’ve tried many times and I finally think I’ve got it right! These are indulgent enough for dessert, but I purposely placed them in the breakfast category because who doesn’t want a chocolate-y, rich start to their morning sometimes 🙂 What makes this recipe so low calorie is the lack of oil or butter. 1 tbsp of each oil and butter contains about 100 calories. Most recipes call for about 4-8 tablespoons. So that right there is about 400-800 calories! The secret in these is fat-free milk with vinegar, which creates a light buttermilk effect that mimics fat and applesauce, which is a meager 50 calories for 8 tablespoons. 800 or 50 hmm, what to choose. 50 duh! The great thing about these is that no flavor is sacrificed for the omission of a good number of calories! The chocolate chips in the recipe are a bonus, making this sweet treat extra special!

Recipe adapted slightly from Can You Stay for Dinner:
1 cup fat free milk
1 tsp vinegar
1 cup all purpose flour
1/3 cup cocoa powder
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsweetened applesauce
3/4 cup packed brown sugar
1.5 tsp vanilla extract
1/2 cup chocolate chips

Makes 12:
Preheat oven to 350 degreesF
Start of by mixing milk and vinegar together (it needs to curdle–this will take about 15-30 minutes)
In a small bowl measure out the flour, cocoa powder, baking soda, baking powder, and salt
Once milk has curdled, add applesauce, sugar, and vanilla
Add wet ingredients to dry ingredients
Stir until just combined
Stir in chocolate chips
Bake for 25 minutes or until toothpick comes out clean
